Sammlung Hans Haas
Hans Haas comes from Austria and was head chef at the Tantris restaurant in Munich between 1991 and 2020. He worked under his predecessor Eckart Witzigmann as sous chef in his restaurant "Aubergine" back in 1982. As a chef at Tantris, his work was honoured with two Michelin stars, among other accolades.
Hans Haas donated around 60 menus from top European restaurants to the Archive of Culinary Arts, including, of course, documents from Tantris.
